			<content:encoded><![CDATA[<p>We&#8217;re having spaghetti AGAIN?!  After this recipe, that uses the not-so-ordinary ingredients for this famous dish, you won&#8217;t hear that again!  Try this spaghetti with a twist, I guarantee you it won&#8217;t be your last time making it!</p>
<p>1 pound uncooked spaghetti<br />
1 pound ricotta cheese<br />
12-14 oz prepared pesto<br />
2 1/2 cups shredded mozzarella<br />
1 cup grated Parmesan cheese<br />
1 cup crumbled goat cheese</p>
<p>1.  Preheat the oven to 400 degrees.  Grease a 13 X 9-inch baking dish.  Cook the spaghetti in large pot of boiling, salted water 2 minutes less than package directions.  Drain well and transfer to a bowl.  Stir in the ricotta, pesto, 1 cup mozzarella, 1/2 cup Parmesan, and the goat cheese.  Toss until well-mixed and transfer it to the baking dish.</p>
<p>2.  Sprinkle the remaining 1 1/2 cups mozzarella and 1/2 cup Parmesan over the pasta.  Bake until the cheese is melted, about 20 minutes.  Turn the oven to broil and broil for about a minute, until the top is golden.</p>
<p>TIPS:   Pair with a tomato salad and fresh, hot bread for a complete meal!</p>
